Can you use 2 of these units at the same time without interference? ie 8 mics and 2 receivers all working at the same time without drop out

Yes, you can. You will just need to ensure that each microphone is operating on a different frequency, which you can select on each receiver. There are a total of 50 selectable frequencies per receiver, so you can use a large number of these sets simultaneously without interference
